My biggest take away from Thao was from being with her in person. I learnt that she broke all the rules of the time in making the style her own. I like that DTC still brings that message through in the online workshops and forums. It’s not about creating offerings that copy and paste DTC. Instead, the workshops create the space for us to learn the basics so we waste less time making mistakes. What we do with it after is completely up to us.
For me, it’s given me the confidence to experiment. Take what I know in principle and overlay my creative eye.
The tips and detailed information provide you with a strong foundation in which you can adapt and tweak to your liking. My work looks so much more refined and elevated. It gives me the confidence to try new things and experiment because I have a strong foundation.

I love that the online course is one I can continually look back on, re-watch the videos and check in on myself that what I’m doing is resulting in the best and cleanest outcome. Further to that, some of the shorter online courses have been invaluable in learning safe and correct techniques without wastage to make isomalt sails, to temper chocolate or to expand the flavours I offer my clients. Not to mention the confidence to experiment with different flavours and combinations.
I don’t think I can articulate the amount of help Thao’s courses have given me, her advice is so detailed and precise. It allowed me to refine my skills so much faster than if I’d just learned from trial and error, YouTube etc. I’m also a perfectionist so it was less frustrating when things went wrong because Thao’s course had so many helpful tips and things to try. I knew I could keep adapting and improving my skills. I love all the recipes and use many of them every week in my business.
All DTC courses have provided fantastic methods and recipes which I have been able to harness and adapt to best suit the needs of my business. The entire DTC system and its philosophy; to focus on "maintaining quality while maximising efficiency", really is what people in the modern cake-making world desperately need.
