    I struggle a lot with getting right consistency for buttercream…
    What is the best ratio for butter: sugar when making the butter cream?

    Where I live, weather can get really hot n buttercream icing tends to just melt easily

    1. I use my own DTC buttercream recipe which uses the Italian Meringue buttercream method but I use whole eggs. So unfortunately I can’t advise on the ratio for butter:sugar as I don’t make American Buttercream. Unfortunately, buttercream doesn’t go well with heat, so when working with it there are a number of precautions we need to accept and take. My article on buttercream melting below might help you.

I am a hobby baker who makes cakes for family and friends. I spent over a year trying to find the right cake making class to attend at a cookery school or online to finesse my skills but none were the right fit. Social media was overwhelming with courses. Then I came across Don’t tell Charles and Buttercream Mastery which was exactly what I had been searching for. The course is excellent. I have improved my cake making skills and had so much fun. Thao is a great teacher with written modules complemented by ‘how to’ videos. I loved her approach emphasising the need to understand the methods to baking. It all makes sense now. Her cakes are phenomenal. They are sophisticated modern works of art. Her talent superseeds anything else I have seen. This course is a must and worth the price.

I joined buttercream mastery to refine my cakes to the next level, and I realised it’s really the little things which make a big difference.the technique of covering a cake is simple ,yet effective.i have just joined and this is my first cake ,looking forward to improving and achieving that picture perfect cake very soon !!!

I cannot believe I waited so long to sign up. I am a hobby baker and just love to learn about things cake!!! All instructions are straight forward and easy to follow. Where my planning time has increased the physical time to bake and create is quicker. I cannot thank Thao enough she is thorough and helpful. Cake and frosting recipes taste great and not overly sweet. I was struggling with the cake to frosting portions and this has made my life so much easier. I know I still have a long way to go. But so proud of what I have achieved so far. If you haven’t done so yet…. You need to sign up.

I absolutely love this course, so much so, I went and enrolled in the versatile baker course too!

Buttercream mastery takes you through step by step, how to achieve professional looking cakes, with PDFs and videos.

I love the FAQ and troubleshooting for when I come across a snag.

Thao is awesome – she is straight to the point and gives you the most accurate and relevant instructions. Love her!

Before DTC I wasn’t very confident in tackeling tiered or tall cakes and used to spend ages trying to get my buttercream smooth. Since doing her course it has given me the confidence in knowing I am doing everything right and if at any point I have any doubt or have forgotten anything I can go back and check with the written material that is given or I go back and watch the video again. Just also love that quantities of buttercream is worked out on how much to fill and cover for all sizes so I don’t have to guess and find out later that I don’t have enough especially when making my colours. Was so excited to try out the different techniques learnt with my black and white cake and how easy doing my tall cakes were compared to before doing the DTC course. You will learn so much not to mention temperature of your buttercream OMG so much easier with your information. These little things people don’t think about makes a huge difference! Worth every cent!
